Just the other day I made Cranberry Dog Treats…and had so many cranberries left over I decided to come up with another dog recipe! Since the holidays are synonymous with fruitcake (and fruitcake is a no-no for dogs because of the raisins and liquors found in most recipes), I wanted to come up with a dog-friendly fruitcake recipe!
The ingredients list is pretty simple:
- 2 cups all-purpose flour
- 1 cup fresh cranberries
- 1/3 cup molasses
- 1 cup pecans, divided
- 1 apple, peeled and cored
- 1 egg
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 cup water
Preheat the oven to 350 degrees and grease muffin pans. I used mini-muffin pans (four in all) for this recipe but you could also make it in standard muffin pans or in a cake pan.
First, chop the cranberries, apple, and half the pecans in a food processor or blender. In a large bowl, combine all other ingredients; when mixed, add cranberry-apple-pecan mixture and stir.
The mixture is a thicker than cake batter…looking almost like peanut brittle…
Pour batter into the muffin pans (with the mini ones, I had to pour it tablespoon at a time). Top muffins with a pecan half (or some pecan crumbles…the dogs won’t mind.)
If you don’t have pecans, any other nut except macadamia nuts will work, too (macadamia nuts are toxic for dogs). Our dogs love almonds and cashews!
Pop the trays in the oven for about half an hour then cool completely before serving and refrigerating. These are tasty (John had to do some taste testing before the dogs had their chance!), like fruit cake but less sweet. Save one for Santa!
